Like cake and love wine? You're not alone. The whole of this Toddy® Blackberry Wine Coffee Cake is definitely greater than the sum of its parts.
Preheat oven to 325°F. Butter and flour a 10-inch tube pan. Add chopped pecans to the bottom of the pan.
Combine cake mix, gelatin, eggs, oil, 1/2 cup blackberry wine, and cold brew coffee concentrate. Beat for 2 minutes, then pour batter over top of pecans. Bake at 325°F for 40-45 minutes.
In a medium saucepan, mix together powdered sugar, 1/2 cup blackberry wine, and softened butter. Warm mixture over low heat until butter fully melts and ingredients combine.
Pour half of blackberry wine glaze over top of cake while still warm. Let set for 10 minutes, then remove cake from pan. Allow cake to cool fully before pouring the remaining glaze on top.
