Toddy® Cappuccino Muffins

Individually wrapped Toddy cold brew cappuccino muffins

These dense, lightly sweet muffins make a solid go-anywhere treat. Not so surprisingly, they taste really great alongside some cold brew, or a tall glass of milk if that's more your speed. We recommend you mix it with cold brew.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 tablespoons cold brew coffee concentrate                              
  • 1 cup milk
  • 1/2 cup butter, melted and cooled
  • 1 egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 3/4 cup semisweet chocolate chips

Directions

Preheat oven to 375°F. Grease and lightly flour a 12-cup muffin pan or use muffin liners. Combine dry ingredients (except chocolate chips). 

Stir moist ingredients until blended, then mix with the dry ingredients. Stir in chocolate chips, spoon into muffin cups, and then bake for 15-20 minutes.

Makes 12 muffins
