Upgrade the average brunch with some conversation-starting Toddy® Green Tea Eggs.
In a large saucepan, cover eggs with cold water and add one teaspoon of salt. Bring to a rolling boil, then turn off heat, cover, and leave on the warm burner for 12-14 minutes.
Drain the eggs, and cover with cold water. When eggs have cooled, tap the eggs with the back of a spoon to crack the shells. (Do not remove the shells.)
In a 2.5-quart saucepan, combine 3 cups water, soy sauce, black soy sauce, salt, cold brew tea concentrate, star anise, cinnamon stick, and orange zest. Bring the mixture to a boil, then reduce heat, cover, and simmer for 30 minutes. Remove from heat, add eggs, and let steep for at least 8 hours in the refrigerator.
After the eggs have steeped, pour out the tea mixture and run eggs under cool water. Peel eggs and enjoy.
