Few things declare "summer!" like homemade ice cream. This year, try an especially irresistible combination: Toddy ice cream and caramel sauce.
Pour all ingredients into a bowl and whisk until combined.
Pour mixture into an ice cream maker and freeze according to manufacturer's instructions. For this recipe, our ingredients were in the machine for 20 minutes. Next, place the ice cream into an airtight container and leave in the freezer for a few hours to set up.
Makes 9 servings
In a heavy 2-quart saucepan over moderately low heat, heat sugar, stirring slowly with a fork, until melted and pale gold in color. (Low and slow; patience is key.) Remove from heat.
Stir together cold brew coffee concentrate and lemon juice. Carefully add to caramel (mixture will bubble up, vigorously steam, and harden). Return mixture to stovetop, stirring until caramel is dissolved and sauce is smooth.
