These unassuming snap cookies are the perfect afternoon snack or after-dinner dessert, just sweet enough to satisfy the cookie craving.
Preheat oven to 400°F. Line baking sheets with parchment paper or silicone mats. In a large bowl, beat shortening, brown sugar, white sugar, egg, vanilla, milk, and cold brew concentrate for 4 minutes.
In another bowl, blend together flour, salt, baking soda, and baking powder. Add to sugar mixture and blend for several minutes. Chill dough in the refrigerator for 10 minutes.
After chilling, shape dough into 1-inch balls. Place balls 2 inches apart on prepared baking sheets. Pour some sugar onto a plate, wet the bottom of a glass, dip glass into sugar, and use it to flatten dough balls to 1/8 inch thickness. Bake at 400°F for 8-10 minutes until lightly browned.
